Raw guiltless peach tart

What to do with all these bountiful stone fruits that are so juicy and sweet right now?  I know, let’s make a raw guiltless peach tart for all these warm summer evenings we have here on the blog, right?

Raw guiltless  peach tart for 3 to 4 people

2 cups almond flour / 4 1/2 dl mandelmjöl

2 tbsp coconut flakes / 2 msk kokosflingor

3/4 + 1/4 cup honey / 2 + 1 dl  flytande honung

3 peaches / 3 persikor

Garnish: cherries and peach slices

Mix almond flour, coconut flakes and honey in a bowl and form it to a boll. Use less honey if you like it less sweet. Add a tbsp water to make the boll hold together if needed. Place the dough in a smaller tart form and spread it out evenly with your fingers and set aside.  Cut the peaches and place them in the blender with the rest of the honey, or less and mix until it’s nice and creamy. Spread the mixture into the form and keep it in the fridge until cool. Garnish with peach slices and cherries and serve.  I love to eat this pie cold straight from the fridge. And nope, you are not suppose to bake it in the oven… it’s raw.

Put it in your smoothie

Coconut oil for everything! if you ask me. I use about it in my smoothies almost every day and it gives green smoothies that little extra flavor. Coconut oil is something that belongs in everyones kitchen. I use it for so many things. I cook with it, make popcorn with it, thanks for the tip Filippa! I also use coconut oil as facial cleanser if needed (oil removes oil) and for my whole body after showers, it locks in moister really well and the oil is a great hair mask as well. If you are new to it. Start adding it to green smoothies, you will love it.

1 cup frozen mango, 1 handful spinach, 1 tsp or more coconut oil ( extra virgin, unrefined) and as much almond milk as you like and maybe some vanilla.  Cheers!

Quinoa porridge with miso & a greenie

Good morning all. I’m watching the World Cup and eating some breakfast. So sad that Neymar is injured.  I loved watching Brazil play and now there’re gonna be so shorthanded on tuesdays game.

I made some quinoa porridge with miso cooked in almond milk and filtered water. Topped with some berries, pomegranate and rose petals.

And I juiced some apples, zucchini, kale, chard, spinach and added a little apple cider vinegar. Enjoy the sun! 🙂
