Gjusta Bakery breakfast

We woke up early and headed over to Gjusta Bakery for an early breakfast. Its been raining, a well needed drizzle and time to dig deep in the closet for the winter gear. I like it!

Hm.. what should i eat today? The options are many here and the last thing on the counter that caught my eye was homemade granola and a bowl of raspberry compote, one bowl of roasted quince vanilla and one with roasted crab apples. I picked all three of them with yoghurt and granola.

Gjusta bakery! Another pearl from Gjelina

A brand new bakery from the Gjelina guys is finally opened only 5 minutes walk from my house. What a dream to have a little bit of Gjelina and G.T.A so close to me. This place is gorgeous with a huge open kitchen, a coffee bar and lots of homemade pastries and bread, G.T.A style salads, frittatas, pies and all the things that they do so well. I’m a huge fan of whatever Travis Lett is doing… he really gets it. Thank you for making another street in Venice bloom!

chiapudding with apple, maple & cinnamon compote

Saturday night and It’s only me and Olive. I am enjoying some quiet time outside with a bubbly kombucha.  Justin took off to the mountains yesterday for a breather. He really needed to go for a ride up to the wilderness together with all his gear for the weekend. He loves it.

In the mean time I’m enjoying this box of goods. The other day I used some of the apples to make a maple, cinnamon compote on top of a chia pudding.

I made a chia pudding with 1 cup coconut milk, 4 tbsp chia seeds and some raw honey to sweeten a little. Let it sit in the fridge until its thicken. In the mean time cut 3 apples in peaces, throw them in a pot together with 1/3 cup water , 1 tsp pure vanilla extract, 1 tbsp and cinnamon or more if you like.  Bring it to a boil and let it simmer for a good 15-20 minutes. Then mash some of the apple peaces with a fork. I like the compote to be a little chunky. When the apples are soft let it cool before serving it on top of the chia pudding. Simple and delicious… and healthy!
