This weeks box is so great and colorful. I’m thinking gazpacho just by looking into this box full of fresh harvest. Gazpacho with strawberry, chocolate lipstick pepper and cilantro. Yum! I will show you the results tomorrow night. I know it’s only 10 pm, but i can’t keep my eyes opened any longer. Long busy days ahead and then Sweden next week for a few days, yay! Cheers and night night.
Saturday night and It’s only me and Olive. I am enjoying some quiet time outside with a bubbly kombucha. Justin took off to the mountains yesterday for a breather. He really needed to go for a ride up to the wilderness together with all his gear for the weekend. He loves it.
In the mean time I’m enjoying this box of goods. The other day I used some of the apples to make a maple, cinnamon compote on top of a chia pudding.
I made a chia pudding with 1 cup coconut milk, 4 tbsp chia seeds and some raw honey to sweeten a little. Let it sit in the fridge until its thicken. In the mean time cut 3 apples in peaces, throw them in a pot together with 1/3 cup water , 1 tsp pure vanilla extract, 1 tbsp and cinnamon or more if you like. Bring it to a boil and let it simmer for a good 15-20 minutes. Then mash some of the apple peaces with a fork. I like the compote to be a little chunky. When the apples are soft let it cool before serving it on top of the chia pudding. Simple and delicious… and healthy!
We decided to head down early to the Abbot Kinney Festival, which happens every year and attracts millions of people… it feels like. To go early was a brilliant idea. It was not too crowded and i wanted to go check out this talented and pretty lady. Meadow Rose is a Santa Barbara local photographer who makes really cool wood prints. I will absolutely get a bunch of them… once i know where to put them! 🙂 I love the SB beach shots as well as the denim and models. Check out her Insta here.
Very pretty!
See? Perfect timing!
Another Santa Barbara local. Say hello to Hello Harvest. They offer farm boxes delivered to your door. Good food, to you!
Look at this bountiful harvest. All from Santa Barbara. I love it. Not only cuz it comes from SB… but you now what i mean.
