Who doesn’t love pancakes? I love pancakes. But I can’t do them the traditional way with milk and white flour. It hurts my belly. This morning I made small ones with coconut flour, coconut milk, eggs, vanilla and some salt. It worked great! They were all gone before I got to snap any shots of it.  Justin made a stack of his with spinach, bacon and cheese in between. I made mine with some raspberry chia jam. If any of you have my book Hälsokick, there is a recipe in there with chia jam. Extremely easy and seriously good. All you need is raspberries, chia, water, vanilla and honey. It works great on pancakes, crackers, porridge or just by itself (dipping a finger in it every time the fridge is open) for example!
