Pizzatime!

What a beautiful day. I think It’s a pizza in the hammock kind of day.  I had a dough laying around and some yummy pizza sauce as well. The recipe for this dough and sauce comes from Farmer and cook, a recipe they will share in my next book Superhälsa. I had to test drive the recipe and happened to have a peace left, bingo! Pizza sunday!

Normally, I don’t make my own crust. I walk down to Whole Foods for one of their gluten free crusts which I really like. This is the real deal though, and It’s good. I topped it with todays farmers market finds,  asparagus, kale, red onions, garlic and cracked an egg on top. I love kale and eggs on pizzas. And then some ricotta cheese. My go to cheese for pizza is an asiago parmesan blend. But ricotta was what the fridge offered today. And it worked great.

Chianola parfait.

It’s ridiculous how easy it is to make chia puddings and it goes so fast. 4 minutes to make at night and then ready and perfect in the morning. While I was waiting for the tea water to boil I poured som almond milk in a bowl, added some honey and vanilla, stirred and threw in some chia seeds, stirred again and put it in the fridge and let the seeds do it’s magic overnight. This morning I layered some pecan granola, chia pudding, blueberries, granola, chia pudding, raspberries, blueberries, hemp seeds and coconut chips. Hearty, healthy and heavenly!
