Glutenfria wåfflor

I had severe cravings for waffles today and decided to whip up something gluten free and healthy.  They came out crispy and good. If you wanna try, here is the recipe.

Gluten free waffles // Glutenfria våfflor

Dry ingredients

1 dl bovetemjöl  –  1/2 cup buckweat flour

1 dl mandelmjöl  –  1/2 cup almond flour

2 tsk bakpulver  –  2 tsp baking powder

1 tsk vanilj extrakt  –  1 tsp vanilla extract

1 tsk himalaya salt  –  1 tsp himalaya salt.

Nope, I don’t think its too much, It’s tasty with a little salt in the batter.

Wet ingredients

4 dl kokosmjölk  –  1,7 cups coconut milk

4 ägg  –  4 eggs

3/4 dl kokosolja smält  –  less than 1/2 cup coconut oil, melted

Mix the dry ingredients in a bowl then mix the wet ingredients in a separate bowl. Then, stir them together gently and whisk it to a smooth batter. Set aside while prepping the rest.

Berry jam: Mix some berries you like with some honey to taste. Add a few drops vanilla. Stir and taste. I used frozen black berries and raspberries.

Coconut whip. Whip a can of coconut milk with some coconut sugar or vanilla sugar, add some himalaya salt to taste. It doesn’t get so extremely fluffy but a little bit at least.

Now it’s time to make the waffles. Make them crispy and top them with the coconut whip, berry jam, and some extra berries plus coconut flakes. Mmmm…. berry good!

Health packed smoothie with coconut yogurt

I stopped for this health packed smoothie today at Life Food Organic in Santa Monica.  Would you like to try this? Homemade coconut probiotic yogurt, coconut water straight from a nut, kale, hemp seeds, spirulina, mango and cinnamon. Full of nourishing plant protein from the hemp and spirulina, lauric acids from the coconut and a good source of calcium from kale. Perfect for the little guy in my belly 🙂

Here is a recipe for homemade coconut yogurt if you want to try, next time you got a hold of a fresh young coconut. The green one, not the brown.

Coconut yogurt

6 dl coconut meat

2 dl coconut water, preferably from the same nut

1 tbsp lemon juice

1 tsp honey

Put all ingredients in the blender and blend until smooth and creamy. Put it in a glass jar and boost with 1 tsp probiotic powder.  You can empty probiotic capsules if you like, just make sure It’s from a good brand. Stir and let it sit in the jar with a lidd on the counter over night. In the morning you should have a thick health yogurt. Keep it in the fridge for a few days and use in smoothies or together with berries and granola. Yum!
