A fresh young coconut is such a treat for me. I usually throw the meat in smoothies, but today i “needed” something “fluffy and cold with chocolate” so i decided to make a Coco Choco Mousse. Too crack open a coconut to scoop out the meat, you might need a strong man handy 🙂 or If you just want to drink the water, it’s easy to cut off the top with with a sharp knife. But please be careful here!
Coco choco mousse: 1 cup meat, 1 small banana 1/2 cup coconut milk, 1 tbsp raw honey, 2 tbsp coconut chips, 1 tsp vanilla and 2 -3 tbsp raw cacao powder and a few mulberries. Mix it in a high speed blender until smooth. Place in glass cups and let it chill in the freezer for a few minutes. Add some coconut flakes and some sweet and delicious pomegranates on top right before serving. The water? I had some of it and the rest i put in the freezer, that way I have raw coconut water whenever I want 🙂

What else can we do with coconut meat? Chop it up and put in salads, make probiotic yogurt, coconut milk, Ice cream or just eat it raw… but do it right away after hammering the shell… it gets dry really quickly.
I can’t get enough of coconut and chocolate. It’s such a great combo. I used all the meat and water that was inside, about 1 cup meat and 1 cup water, about 2 tbs coconut chips, 2 tsp maca, 2 tablespoons raw cacao, 1 cup frozen pineapple and a little almond milk and vanilla. A coconut loaded with nutrients.
