PIZZA RUSTICA ( See below for english version )<\/p>\n

Jag gjorde den h\u00e4r pizzan f\u00f6r ett repotage i tidningen Gourmets<\/a> majnummer med fotografen Fredik Skogkvis<\/a>t som tar de mesta av de bilder jag inte tar sj\u00e4lv p\u00e5 mig eller maten jag tillreder.<\/p>\n

En gr\u00f6nsakspizza gjord p\u00e5 botten av en ugns- torkad raw pizzadeg.
\nBOTTEN:
\n3 dl groddat bovetemj\u00f6l
\n2 dl ljusa chiafr\u00f6n
\n2 dl mandel
\n1\u20442 tsk havssalt
\n1\u20442 dl surk\u00e5l
\n1\u20442 dl kombucha
\n2 msk kallpressad olivolja<\/p>\n

TOMATS\u00c5S:
\n1 morot
\n1 vitl\u00f6k
\n4 dl soltorkade tomater
\n1 citron, finrivet skal och saft 1 tsk finhackad f\u00e4rsk chili 1\u20442 tsk havs salt
\n2 msk agavesirap TOPPING:
\n2 dl n\u00f6tost
\n1 msk basilikablad
\n2 dl pepprig rucola
\n2 v\u00e4l mogna tomater
\n1\u20442 gul l\u00f6k
\n1 liten f\u00e4nk\u00e5l
\n1\u20442 tsk svartpeppar
\n2 endiver<\/p>\n

DU BEH\u00d6VER OCKS\u00c5: mixer
\n2 bakpl\u00e5tspapper<\/p>\n

1 V\u00e4rm ugnen till 30\u00b0. Mixa bovetemj\u00f6l, chiafr\u00f6n, mandel och salt noga. Mixa surk\u00e5l, kombucha och olja separat. Kn\u00e5da ihop mj\u00f6lblandningen och surk\u00e5lsblandningen till en sl\u00e4t deg.<\/p>\n

2 Dela degen i tv\u00e5 och kavla ut bitarna till rundlar mellan bakpl\u00e5tspapperen. L\u00e4gg rundlarna p\u00e5 ugnspl\u00e5t och torka i ugn \u00f6ver natten med ugns- luckan p\u00e5 gl\u00e4nt.<\/p>\n

3 Tomats\u00e5s: Skala moroten och riv den fint. Skala alla vitl\u00f6ksklyftorna. Hacka de soltorkade tomaterna fint. Blanda samman morot, tomat, citronskal och citronsaft. Tills\u00e4tt chili, salt och agavesirap. Pressa ner vitl\u00f6ken och blanda sam- man.<\/p>\n

4 En timme f\u00f6re servering: V\u00e4rm ugnen till 30\u00b0. Bre n\u00f6tosten p\u00e5 pizzabottnarna, l\u00e4gg p\u00e5 basilikan och toppa med tomats\u00e5sen. Torka i ugnen med ugnsluckan p\u00e5 gl\u00e4nt.<\/p>\n

5 Skiva tomat, l\u00f6k och f\u00e4nk\u00e5l tunt. Ta ut pizzorna och toppa med tomat, l\u00f6k, f\u00e4nk\u00e5l och rucola. Mal \u00f6ver svartpeppar.<\/p>\n

6 Servering: Sk\u00e4r pizzan i trekantiga bitar. L\u00e4gg upp pizzan ihop med endiveblad p\u00e5 en stor tallrik. L\u00e4gg varje pizzaslice i ett blad och \u00e4t med h\u00e4nderna.<\/p>\n<\/div>\n

I made<\/span> this<\/span> pizza<\/span> for the swedish<\/span> magazine<\/span> Gourmet<\/a> in it\u00b4s<\/span> May<\/span> issue<\/span> with photographer<\/span> Fredik<\/span><\/a> Skogkvist<\/span> who takes<\/span> most of<\/span> the<\/span> pictures of the food I make and of me<\/span>.<\/span>
\n<\/span><\/em><\/p>\n

A vegetable<\/span> pizza<\/span> made<\/span> with<\/span> an<\/span> oven<\/span> dried<\/span> raw<\/span> pizza dough<\/span>.<\/span><\/em><\/p>\n

Crust:<\/span>
\n3 cups<\/span> sprouted<\/span> buckwheat flour<\/span>
\n2 cups<\/span> light<\/span> chia seeds<\/span>
\n2 cups<\/span> almonds<\/span> flour
\n1\/2<\/span> tsp<\/span> sea salt<\/span>
\n1\/2 cup<\/span> sauerkraut<\/span>
\n1\/2 cup<\/span> kombucha<\/span>
\n2 tablespoons<\/span> cold-<\/span>pressed olive oil<\/span><\/p>\n

\u00a0You’ll also need<\/span>: blender and <\/span>2<\/span> sheets baking paper.<\/span><\/em><\/div>\n<\/div>\n

\n1<\/span> Preheat the oven to<\/span> 40<\/span> \u00b0<\/span>. Mix<\/span> buckwheat flour<\/span>, chia seeds<\/span>, almond flour and salt<\/span> thoroughly in mixer.<\/span> Mix<\/span> sauerkraut,<\/span> kombucha<\/span> and oil<\/span> separately.<\/span> Place in a bowl mix and knead the 2 doughs together.<\/span><\/em>2<\/span> Divide the dough<\/span> in<\/span> 2<\/span> and roll out<\/span> the pieces into<\/span> circles<\/span> between<\/span> the backing sheets<\/span>. Place <\/span>them <\/span>on <\/span>a baking tray and<\/span> dry in the<\/span> oven overnight<\/span> with the<\/span> oven door a bit open.<\/span><\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n<\/div>\n","protected":false},"excerpt":{"rendered":"
