It´s kind of funny to go thru pics and look at my diet.

What does it make me?

I think the psychedelic glass sums me up. A hot mess of plants, pizza, oysters, more plants.

I move my body with yoga, BARRE, SEX ( someone called me “omätlig”), hard work and enough play to go around.

Play with your food to open your mind and live your life to forget your age.

Så äntligen är siten up and running och vi kan börja. Jag är på väg mellan Matmarknaden där jag gått igenom nästa veckan frukost och produktion med Fredrik som tar över medans jag åker söder ut.

Ett snabbt inlägg innan jag går till yoga studion för att undervisa veckans sista pass.

Och imorgon bär det iväg med Yogiakademin till Bretange. Mitt “första” inlägg blir därför lite inspirations bilder på sallader ni kan göra i helgen.

Vill man styra sin kost mot ett mer växtbaserat håll kan ett tips vara att göra salladen till huvud målet och sen addera protein och kolhydrater.

Jicama rots ris ( går lika bra med palsternacka eller rotselleri), nori ark, lite rostad mandel smör, sesam olja och annat gott.

Hyvlade rotfrukter, lös kokt ägg, avokado, sprit ärter, sesamolja och lime salt.

Blomkåls ris som jag masserat med olivolja och citron. Solros kärnor för crunch, krasse och små raddichio blad.

Torkade nachos som jag gjort på lila majs, det går lika bra med köpta. Avokadomash, massa chilli, gurka, agave sirap, vatten krasse och paranöts sourcream. Mixade 1 dl paranötter med, 1 ugns rostad jordärtskocka, 2 dl äppelcider vinäger och lite salt.

Ungs rostad jordärtskocka med rökt paprika, chilli och rivna morötter.

Seed butter pesto

Today I made a raw lasange for lunch at Stockholms Matmarknad. I traded the usual nut based cream for pumpkin seeds.

Pumpkin seeds is an alternative to nut butters and pestos for those with food allergies. It is a great source of protein, vitamins A, E and C, zinc, calcium, iron and potassium. It also contains the valuable omega 6 and 9 essential fatty acids.

When making a real pesto no mixer is needed. I use a cutting board, knife and a mortel.
But to make the pesto more like a butter I used a high powerd Vitamix to really make it creamy.

Some of the best basil you can get is Swedish and from Åkerby Handelsträdgård and can be bought at the market.

To make this pumpkin seed butter/pesto you need:

4 dl of pumpkin seeds.

3 dl of coldpressed olive oil.

Zest and juice from 1 lemon.

2 tbs of agave nectar. I used raw honey from our roof tops. City bee hive farming a couple of stories up in the air.

1 1/2 tbs of salt.

5-7 dl of good fresh basil.

Mix a little bit at a time in mixer. Always pour liquid or in this case oil first to avoid the seeds and leaves to get stuck.
